Life in India is punctuated by festivals. They aren't just holidays; they are seasonal markers. (the festival of lights) signifies the victory of light over darkness, while Holi (the festival of colours) celebrates the arrival of spring. Indian food is perhaps the most famous export of its culture, but "Indian food" as a singular category is a myth.

A world of fermented rice batters (Idlis and Dosas), coconut-based curries, and the aromatic punch of curry leaves and mustard seeds.
